I hear there's a big game this weekend?! Anyone watching it? Me ... I'm mostly participating for the food! Just keepin' it real. We usually have some kind of party (with tons of finger food!). Football isn't in my blood ... I don't live and breathe it. Truthfully, I only ever watched it because of one person. I know ... I'm lame. What can I say?! :) I had been a "fan" (and I use that term loosely - it was more of a fan of the quarterback!!) of the Indianapolis team .... you know the one who Manning used to play for before heading to Denver? After he moved to Denver, I was kinda heart-broken, and I haven't really watched too much football. I don't want to be a band-wagoner - so I don't really have a "team" now. I still love me some Peyton Manning though - you better believe I'll be cheering for #TeamManning this weekend - woot woot! And, you can be sure that these Potato Skins will be making an appearance at our house this weekend, too!

These Potato Skins are super easy to make - and they're even easier if you have leftover baked potatoes! :) Just a note - I like to put my potatoes in a large zip-top bag with the canola oil and shake or move them around, making sure they're all evenly coated - I hate having all of that oil all over my hands!

Potato Skins
Printable recipe
Yield: 10 servings

5 medium russet potatoes, scrubbed
2 tbsp. canola oil
2 tbsp. butter, melted
Salt, to taste
1 cup Cheddar cheese, shredded
6-8 slices bacon, cooked, drained and crumbled
2 green onions, thinly sliced
Sour cream or Ranch dressing, optional

Preheat oven to 400°F. Prick each potato 5-6 times with a fork. Rub the potatoes with canola. Place on a baking pan sprayed with cooking spray. Bake for 45 minutes.

When the potatoes are cool enough to handle, cut each potato in half lengthwise. Scoop out the insides, leaving a little bit of the potato as a shell. Brush both sides of the potatoes with the melted butter. Place cut-side up on the baking sheet and sprinkle with desired amount of salt. Return to the oven and bake an additional 10 minutes.

Remove from the oven and sprinkle evenly with cheese and bacon. Return to the oven for 3-4 minutes, or until the cheese is melted and bubbly. 

Remove from the oven and sprinkle with green onion. Serve with sour cream or Ranch dressing!

Chocolate Cherry Marshmallow Brownies

Where has January gone?! It's hard to believe it's almost February - of course, the weather is reminding much of the country that it's still winter! With Valentine's Day approaching, I wanted to share an easy dessert idea. These Chocolate Cherry Marshmallow Brownies are eye-catching with their bright red, white and dark brown colors!

This is one of those recipes I tried years ago and tucked it away to make again ... and promptly forgot about it! Don't you hate when you do that?! I was going through some paperwork recently, and found this little gem. I remembered how great it was years ago - and knew I had to make it again and share it with y'all!



Chocolate Cherry Marshmallow Brownies
Printable recipe
Yield: 18-24 servings

2 cups granulated sugar
1 cup (2 sticks) butter, melted
4 eggs
1 cup all-purpose flour
1 cup baking cocoa
2 tsp. baking powder
½ tsp. salt
2 cups miniature marshmallows
1 jar (10 oz.) maraschino cherries, drained well and chopped
½ cup semi-sweet chocolate chips
2 tbsp. heavy whipping cream

Preheat oven to 350°F. Spray a 9x13-in. baking pan with cooking spray and set aside.

In a large bowl, cream the sugar and butter. Add the eggs and beat until thoroughly combined. 

In a separate medium bowl, combine the flour, cocoa powder, baking powder and salt. Gradually add to the creamed mixture.

Pour and spread the mixture evenly into the prepared pan. Bake for 28 minutes. Remove from the oven and sprinkle with the marshmallows. Bake an additional 2 minutes or until the marshmallows are softened, but not browned. Remove from the oven. Sprinkle with cherries and allow to cool on a wire rack. 

In a microwave-safe bowl, melt the chocolate and cream. Stir until smooth. Drizzle chocolate over brownies. Let stand until chocolate is set! Cut into squares.

Slow Cooker Beef & Noodles

My folks grew up in the Midwest. That means growing up, they ate a lot of hearty, stick-to-your-ribs meals ... like Beef and Noodles! Of course that also means, that's the kind of meals I grew up eating too! I remember getting excited when I saw my mom making homemade noodles, because I knew that meant we were having Beef and Noodles! It was an occasional treat for us - one I always looked forward to!

It's so easy to make this in the slow cooker - and to tell the truth, I don't always make homemade noodles! (Shhhhh! Don't tell my mom!) I like ours a little thicker and without a lot of liquid, but you can easily adjust that to your family's preference!



Slow Cooker Beef & Noodles
Slightly adapted from Two Maids a Milking
Printable recipe
Yield: 8-10 servings

2 lb. beef roast
1 can (14 oz.) reduced-sodium beef broth
1 envelope (from a 2.2 oz. box) beefy onion soup mix
1 can (10.5-10.75 oz.) cream of celery or mushroom soup, undiluted
3-4 cloves garlic, minced
10 cups of water, more if desired
1 pkg. (24 oz.) frozen home-style egg noodles
Salt and pepper, to taste

Place the roast in a 5-qt. (or larger) slow cooker. Add the beef broth, beefy onion soup mix, cream of celery soup and garlic cloves. Cover and cook on low overnight. 

In the morning, break beef apart and add 6 cups of water. Cover and continue to cook all day. 

An hour before you eat, add egg noodles, salt & pepper, and additional water (4 cups or more, depending on how liquidy you would like it). Cover and cook for an additional hour or until noodles are tender.

**Side note - I don't really think you have to cook the meat overnight. I'm sure you would be fine with starting it first thing in the morning, shredding it and adding the noodles to finish the recipe! :)
