I was actually surprised at how much I enjoyed this - the flavor anyways, not so much the texture. LOL. I'm still working on that part! I know oatmeal is good for you (and maybe it's good for me - notice how I did that?!) and I probably should consider adding more of it to my breakfast routine - instead of my normal toast and coffee. I even thought about drizzling some maple syrup on this to make it mo' betta! Hindsight is 20/20 ... maybe next time! The kids absolutely loved this and wanted it again for breakfast the next day ..... they are so deprived, can't ya tell?
We had this with sausage links and fresh fruit on the side .... it made for an especially economical meal that was fairly healthy for us!
Pumpkin Pie Oatmeal

Yield: 2 servings
1 cup water
1 cup milk
1 cup old-fashioned oats
½ cup canned pumpkin
½-1 tsp. pumpkin pie spice
2 tbsp. brown sugar
½ tsp. vanilla extract
Cinnamon (optional)
Pecans (optional)
Milk (optional)
Maple syrup (optional)
In a medium saucepan, combine the water, milk, oats, pumpkin and pumpkin pie spice. Bring to a boil. Cook and stir for 5 minutes. Remove from the heat and add the brown sugar and vanilla. Sprinkle with cinnamon and pecans, if desired. Serve with additional milk and maple syrup, if desired.
