August is a busy month in the Love Bakes Good Cakes house. School will be resuming - which is always fun readjusting to schedules and routines (note the slight sarcasm) ... and Elijah will be turning 18 years old. As I look back over 18 years, I can't help but think how fast it has come and gone. They say don't blink ...... because it seems like life happens in a blink of an eye. Man, it does.

I really don't want the lazy days of Summer to end. To be honest, I like sleeping in until 6 or 7 am. Y'all know 5 am comes too early.

When thinking about back to school and Elijah's birthday, I wanted to make something to help us hold onto Summer just a little bit longer. I had some leftover mini ice cream cones from our recent pool party and sure, I could have used them for ice cream .... but I wanted something more fun! Gotta squeeze that last little bit of Summer in, ya know?! Ok, well technically I still used them for ice cream ... just not normal ice cream! :)

A few years ago, I had some Ice Cream Cone Cake Pops at a party so I thought I would try to recreate them! They're perfect for birthdays and Summer parties ... and best of all?! They don't melt and drip all over your hands!! :) Plus, people love to talk about them! They are kinda cute, don't you think?!

Ice Cream Cone Cake Pops
Printable recipe
Yield: 15 cake pops

1 box (15.25 oz.) your favorite cake mix (I used dark chocolate)
Ingredients listed on box to prepare the cake mix
1 can (16 oz.) your favorite canned frosting (I used dark chocolate)
1 box (1.6 oz.) mini ice cream cones (you will only need 15 from the box)
1 pkg. (12 oz.) Wilton candy melts (I used Colorburst Brights)
15-17 pieces of DOVE Dark Chocolate Silky Smooth Promises (from a 9.5 oz. bag)
15 red button-shaped candy-coated chocolate pieces
Sprinkles

Prepare and bake the cake mix using the ingredients listed on the box. Allow cake to cool completely.

Crumble the cake into a large bowl. Add about half of the can of frosting and mix well. You want the mixture to stick together without being "goopy." You may need to add more or less depending on your cake and preference. Using a small cookie scoop or rounded tablespoon, make 15 cake balls and place them on a wax paper-lined baking sheet and refrigerate for about an hour. With the remaining cake mix, stuff 15 ice cream cones and set aside.

In a microwave-safe bowl, melt the candy melts according to package directions. Dip just the top of the open end of the cone into the melted candy (carefully, as not to lose any of the cake inside) and immediately dip the bottom of one of the cake balls into the candy melts. "Glue" the cake ball onto the top of the ice cream cone and set aside to completely set. Repeat with remaining cake pops.

Once the cake pops have set completely, re-melt the candy melts in the bowl and dip the cake ball into the candy, completely covering the cake ball. Allow excess to drip off. Set upright and allow the candy to harden. Repeat with remaining cake pops.

Place the DOVE Dark Chocolates in a microwave safe dish and microwave for 30 seconds. Stir. Microwave in 10-15 second increments until the chocolate is smooth and completely melted. Spoon a small amount of the chocolate over the top of the cake pop. Using the back of the spoon, form the chocolate to look like chocolate syrup. Immediately insert a red button candy on the top and add a few sprinkles. Set upright and allow the candy to completely harden. Repeat with remaining cake pops.

As a mom, I feel like I rarely take the time for myself. Most of the time, I'm ok with that .... that comes with the territory! :) As much as I love my family, sometimes it's nice to just have a few minutes of peace and quiet .... and to just relax. Believe me, that doesn't happen often with five kids!

I've said it before and I'll say it again, Summer just isn't Summer without ice cream. Lots of ice cream! Although my family eats it year round, it's especially delicious on a hot day! We get plenty of those in Phoenix! :) That means more excuses to make and eat ice cream, right?!

Knowing that our pool would be done this past weekend and that we were going to be celebrating, I headed to Walmart to pick up stuff for dinner and to make lemon ice cream. I love their everyday low prices! While I was there, I had the idea to find something to clean up the "ice cream goatees" and the messy ice cream dripped hands. Being a mom of five, I know messes! I found these Wet-Nap Hand Wipes which were perfect for the job! I knew they could handle the job by keeping my family clean and ready to swim! :)

I found my Wet-Nap Hand Wipes near the pharmacy section of the store, but saw some more over by the napkins on the paper product aisle. The Wet-Nap Hand wipes are stronger and softer than before, and they moisturize with aloe! Choose between Fresh Scent or Citrus Scent! I went with the citrus canister, but they also have pop-ups and packettes. I thought the packettes would be perfect packed in a lunchbox and I may just need to grab some of those on my next trip for our lunchtime outings to the park during the school year (we homeschool).

Lemon Funfetti Ice Cream
Slightly adapted from Allrecipes
Printable recipe
Yield: 8-10 servings

2 cups heavy whipping cream
1 cup half and half
1 cup sugar
3 tbsp. grated lemon zest
5 egg yolks
½ cup lemon juice
⅓ cup sprinkles

In a medium saucepan, combine the heavy whipping cream, half and half, sugar and lemon zest. Bring to a simmer over low heat. Cook and stir until the sugar is dissolved, about 5 minutes. Cover and allow the mixture to steep for 10 minutes.

Uncover the saucepan and bring the mixture back to a simmer over low heat. Beat the egg yolks in a medium bowl. Slowly add about one cup of the hot cream mixture into the yolks, bringing the eggs up to temperature. Pour the yolk mixture back into the cream mixture and stir to combine. Continue to cook and stir the mixture until it just coats the back of a spoon - about 5-10 minutes. Transfer the mixture to a large bowl. Cover and refrigerate at least 8 hours or overnight.

Stir the lemon juice and sprinkles into the cold mixture. Freeze in a 4-5 qt. ice cream maker according to manufacturers' directions. Transfer to a lidded container and freeze at least 4 hours to ripen flavors before serving.

I picked up some cute little mini cones that were perfect for poolside. Just a few bites and they were gone! They are just enough to keep cool without having to wait 30 minutes to swim ...... Now that I think about it, I'm not even sure if that "rule" was ever really true or not?!

As the grocery shopper, meal planner and head chef at Casa de la Love Bakes Good Cakes (HA!), I try to be very aware of what my family eats so we can be healthy and happy.  Although I often buy fresh produce in season, I am also a huge fan of frozen food since it locks in the flavor and nutrients of the foods my family loves. I love the variety, convenience and that I can enjoy many products "out of season" thanks to the frozen foods aisle! When you think about it, there really isn't much difference between fresh vs frozen


From bags of frozen veggies to portion controlled meals - and even desserts - today's families don't need to sacrifice health to have a quick meal with quality ingredients! Did you know, the coldest aisles in the grocery store have the widest variety of great-tasting options?!

I don't know about you, but I always enjoy a glimpse into other people's kitchens! Here is a look at how my family incorporates frozen foods into our life:

Most of you know, I am not a breakfast eater. However, I do like to keep things on hand - like Toaster Strudels, Eggo Waffles or Jimmy Dean Breakfast Sandwiches - for those times when I do want something to start my morning, but I don't have a lot of time! It's not always easy to convince 5 kids to get up and eat breakfast at the same time! Ya know what I'm saying? My kids are especially fond of the Toaster Strudels because they can make them all by themselves and they love putting the little frosting packets on - usually in a smiley face design! :)

I love keeping a few Lean Cuisines, Lean Pockets or Smart Ones in the freezer for lunch because they offer a variety of delicious dishes that don’t require a lot of time to prepare. Running a house, raising five kids, homeschooling and blogging means sometimes I need easy! Easy and delicious! :)

My freezer is always stocked with different varieties of frozen vegetables. Truthfully, frozen vegetables are probably my favorite thing in the frozen foods aisles! They are easy, convenient and taste just like fresh! They are a staple in my menu planning and to me, it's amazing how much farther I can stretch a meal with just a bag of vegetables! Buying frozen vegetables is definitely a budget saver for me - especially when I buy things out of season! On this particular night, we had cheese quesadillas .... oh, and did I mention that I had dinner on the table in 10 minutes?! #lifesaver This is one of my "I need something quick for dinner meals!" ;)

And who could forget the dessert section - definitely not me! :) Since I am the only person in my family who loves Key Lime Pie, finding things like these singles boxes is perfect! By picking up this box, I am not tempted to eat an entire pie, but I can satisfy my craving for 2 nights!! Woot woot!
