Holy Shiitake Pizza {with EASY Garlic Aioli}

Truth ..... I told y'all before that I stink at naming stuff. Sometimes, I actually amuse myself with some of the stuff that I think of. Yeah, I need to get a life. LOL. Unfortunately for you, this is one of those times. Sure, I could have just called this a mushroom pizza - because that's "technically" what it is .... or I could throw a little bit of shock factor and some humor in there with the hopes that some of y'all might just be intrigued enough to come check it out!

I'm guessing if you've made it to this part, you were intrigued or you really just like mushroom pizza! LOL. Any who - This pizza has THREE kinds of mushrooms,  caramelized onions, cheese, chives and a super simple {cheaters} Garlic Aioli - that I think makes the pizza go from being just a pizza to being bomb-diggity!

Even mushroom haters may like this pizza - my 17 yr. old swears he hates mushrooms - he even goes as far as telling me they're bad for his health ..... but even he liked this pizza! Score one for mom! ;) 

You will notice I don't necessarily give amounts for the sauce or toppings - I really believe that is a matter of personal preference. I used about 4 oz. of each of the mushrooms, and I carmelized one medium onion for this recipe - use more or less depending on your tastes or what you have on hand! :)



Holy Shiitake Pizza
Printable recipe
Yield: 1 large pizza (8-10 slices) or 2 small pizzas (6 slices each)

EASY Garlic Aioli:
¾ cup mayonnaise
3 cloves garlic, minced
2 tbsp. lemon juice
½ tsp. salt
½ tsp. pepper

For the pizza:
1 pizza crust recipe or your favorite homemade or store bought crust
Pizza sauce, to taste
1½-2 cups (6-8 oz.) Mozzarella cheese
Baby Portabella mushrooms, cleaned and sliced
White button mushrooms, cleaned and sliced
Shiitake mushroomscleaned and sliced
Caramelized onions
Chives, snipped

Add the ingredients to the bread machine, according to manufacturer’s settings. Select the dough setting. After the machine beeps, press the dough onto a greased pizza pan.

Meanwhile, mix mayo, garlic, lemon juice, salt and pepper in a small bowl. Cover and refrigerate at least 30 minutes before serving.


Drizzle the crust with olive oil and bake it at 450°F for ten minutes. Remove the crust from the oven and add sauce, cheese and mushrooms, caramelized onions and snipped chives. Place the pizza(s) into the oven for another ten to fifteen minutes or until golden and bubbly. Serve hot with the EASY Garlic Aioli on the side!

**Note - If you are using your own crust or a store bought one, follow the cooking directions for those.

Soft Pumpkin Cookies with Pumpkin Browned Butter Frosting

I really hope y'all are not sick of pumpkin yet! I am sharing some of the best cookies I have ever made - like in the history of ever! These Soft Pumpkin Cookies with Pumpkin Browned Butter Frosting are phenomenal .... you better hide all of the spoons in your house - the frosting is that amazing! Don't say I didn't warn you!

Soft Pumpkin Cookies with Pumpkin Browned Butter Frosting

I really enjoy Fall because I have unlimited permission to eat and drink pumpkin everything without people judging me. Those of you who wait all year for pumpkin season like I do, know what I'm talking about. If you have no idea what I'm talking about - try ordering a pumpkin latte in July or mention pumpkin anything in May. People will ask you if you have lost your mind .... in my case, it may be true! ;)

Soft Pumpkin Cookies with Pumpkin Browned Butter Frosting 2

Not only did I LOVE these cookies - but my kiddos loved these cookies. They told me this was the best frosting I have ever made. That says a lot ... I have made lots of frosting and they love them all, of course - but this one, we were actually looking for other things to put it on - the oldest even wanted me to make a cake just so we could have MORE of this yummy frosting!

It's almost amazing that any of the frosting actually made in ON the cookies between all of us "sampling" it! Let's get to the recipe, shall we?!



Soft Pumpkin Cookies with Pumpkin Browned Butter Frosting
Printable recipe
Yield: about 36 cookies

For the cookies:
2½ cups all-purpose flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. ground cinnamon
½ tsp. ground nutmeg
½ tsp. salt
1½ sup sugar
½ cup (1 stick) butter, softened
1 cup pumpkin puree (aka pure pumpkin NOT pumpkin pie filling)
1 large egg
1 tsp. vanilla extract

For the frosting:
¾ cup (1½ sticks) butter, divided
2 tbsp. brown sugar, packed
¼ cup pumpkin puree (aka pure pumpkin NOT pumpkin pie filling)
½ tsp. ground cinnamon
¼ tsp. ground nutmeg
1 lb (16 oz.) powdered sugar

Preheat oven to 350°F. Line baking sheets with parchment paper and set aside.

In a medium bowl, combine the flour, baking soda, baking powder, cinnamon, nutmeg and salt. Set aside.

In a separate large bowl, cream the butter and sugar until well blended. Add the pumpkin, egg and vanilla and mix until smooth. Gradually add the flour mixture.Drop by rounded tablespoonfuls onto the prepared baking sheets.

Bake for 15-18 minutes or until the edges are firm. Allow to cool on the baking sheet for 2-3 minutes then remove to wire racks to cool completely.

While the cookies are cooling, prepare the frosting: Place 1 stick of butter in a small saucepan. Allow to melt over medium-low heat. Continue to cook, swirling on occasion to check the color, until the butter is browned. Remove from the heat and allow to cool completely.  Beat the remaining half a stick of butter until creamy. Slowly beat in the browned butter until it looks well combined. Add the brown sugar, pumpkin, cinnamon, nutmeg - mix well. Slowly add the powdered sugar and mix well. If you prefer a thicker frosting, you can add more powdered sugar - if you need a thinner frosting, add a little milk.

After the cookies have cooled completely, frost the cookies.

Store cookies in an airtight container.

Chicken Noodle Soup & Kleenex Tissues for Cough, Cold and Flu Season

One of the things I hate about this time of the year (other than the cold and snow - ha!), is this seems to be the time of the year everyone gets sick. As much as I try to keep my family healthy and away from germs, sometimes they still get sick. Unfortunately, having a large family often means that if one of us gets sick, all of us get sick. Definitely not good!


On a recent trip to Target, I stocked up on some winter necessities! I almost always have stuff on hand to make chicken and noodle soup or chicken and rice soup. I also grabbed a 4 pack box of Kleenex tissues. You never know when coughs, colds or even the flu is going to hit - and I like being prepared!

Chicken Noodle Soup 2

The weather has been super wacky here in Phoenix. We recently had 3 days of rain and from what I understand, it's not typical here - not even in the monsoon season. The temperatures took a major nose-dive as well. 

Abby woke up sick the other night. It's so hard to watch your children suffer when you feel so helpless. There's just not much you can do for them. Thankfully, my kiddos don't get sick too often - I just prayed that no one else got what she had!

How many times have you heard that he best things for you when you're sick is to get plenty of rest and fluids? When I was growing up, my gramma and my mom always gave me chicken noodle soup. I'm not sure if there were magical powers in that soup, but it always comforted me and made me feel better. I was always given a box of Kleenex tissues, saltine crackers and all the 7-Up I could drink. Come to think of it, that's the only time I was ever given a free ticket to drink all the soda I wanted! Normally, soda was a very rare treat for us! They also made sure I had an empty trash can close by if I had the flu (in case I couldn't make it to the bathroom in time, of course!)

With my own children, I find myself giving them the same advice - plenty of rest and fluids. When Abby wasn't feeling well the other day, I made some chicken noodle soup (she just picked out the noodles and ate them!) - and she had some crackers and 7-Up - just like my gramma and mom gave me when I was little. We kept the Kleenex tissues close as we watched Nick Jr. most of the day and snuggled!

Thankfully, whatever she had seemed to be a 24-hour bug - and no one else got sick! Praise the Lord! Since the winter season is just beginning, I am so glad I have stocked up on stuff to make more chicken noodle soup, and I have 6 boxes total of Kleenex tissues in the pantry! Something tells me I may need them! We usually have 2 or 3 boxes around the house in the winter months!

Chicken Noodle Soup 3

I do my chicken noodle soup a little different than most. I like my noodles to stay more firm, so I cook them separately and add them to the bowls individually. You could totally just add them to the soup and save yourself that hassle - but if you prefer a more firm noodle in your soup, this is definitely the way to do it! ;) They don't get as mushy! I've also included the method to cook the noodles in the soup below!



Chicken Noodle Soup
Printable recipe
Yield: 8 servings

3 tbsp. olive oil
1 large onion, chopped
5 cloves garlic, minced
4 medium carrots, peeled and cut into coins
1 tsp. dried thyme
2 bay leaves
4 quarts (16 cups) chicken stock
16 oz. dried wide egg noodles, cooked according to pkg. directions, drained and tossed with 1 tbsp. butter
3 cups cooked chicken, chopped
Salt and pepper, to taste

Place a soup pot over medium heat and add the olive oil. Add the onion, garlic and carrots. Cook and stir for 5 minutes or until the vegetables begin to soften. Add the thyme and bay leaves. Pour the chicken stock in and bring to a boil. Reduce heat to medium-low and add the chicken. Allow chicken to heat through. Season with salt and pepper.

To serve: scoop some of the noodles into individual bowls. Add some of the chicken, vegetables and broth over the top.

**NOTE: You can also cook the noodles directly in the soup - Place a soup pot over medium heat and add the olive oil. Add the onion, garlic and carrots. Cook and stir for 5 minutes or until the vegetables begin to soften. Add the thyme and bay leaves. Pour the chicken stock in and bring to a boil. Add the noodles and cook for 5 minutes. Reduce heat to medium-low and add the chicken. Allow chicken to heat through. Season with salt and pepper. Serve.

Cinnamon Roll Bread Pudding

Today, I've got a Cinnamon Roll Bread Pudding recipe that is perfect for the holidays. Can you believe Thanksgiving is THIS week?! Ummmm, I haven't even got my stuff for our meal yet .... I guess I better get busy, huh? It's on my list to do in the morning .... I'm just hoping that despite my procrastination, my local store still has everything I need! Is anyone else a last minute shopper?

As much as I'm not ready for it, the holiday season is upon us. Thanksgiving is just days away .... and Christmas will soon follow. Seriously, wasn't it just summer the other day?! I'm not sure how things are in your house, but we like to have a "special" breakfast for Thanksgiving, Christmas and Easter. By special, I mean, something we don't really eat any other time of the year. They're usually super indulgent dishes .... which is why we don't have them too often!
This Cinnamon Roll Bread Pudding is an exception .... we still don't have it too often - but we definitely don't always wait for a holiday! You can make this with homemade cinnamon rolls that you have already cooked - or you can use up leftover cinnamon rolls to make something a little more fun and special!
This can be a breakfast or a dessert. If we serve this for breakfast, we like to have it with maple syrup on the side, little smokies and some fresh fruit. 



Cinnamon Roll Bread Pudding
Printable recipe
Yield: 10 servings

2 tubes (16 oz. each) Immaculate Baking refrigerated cinnamon rolls
4 tbsp. melted butter
1 cup raisins (optional)
8 eggs, slightly beaten
3 cups milk
1 cup sugar
2 tsp. vanilla extract
2 tsp. cinnamon
Maple syrup (optional)

Remove the frosting from the tubes and keep refrigerated until needed later in the recipe.  Bake the cinnamon rolls according to package directions - minus the frosting. Allow to cool.

Preheat oven to 350°F. Grease a 9x13-in. baking dish.

Cube the cinnamon rolls and place in the baking dish. Drizzle the melted butter over the cinnamon rolls. Sprinkle with raisins, if desired.

In a medium mixing bowl, combine the eggs, milk, sugar, vanilla and cinnamon. Beat until well mixed. Pour the mixture over the cinnamon rolls and gently press the cinnamon rolls down with the back of a spoon.

Bake for 45 minutes or until the top springs back lightly when tapped. Top with the reserved frosting. Serve warm or at room temperature. If desired, drizzle individual portions with maple syrup.

Store any leftovers in the refrigerator.
