Barbecued Peanuts

I am sharing my most awesomely addictive Barbecued Peanuts with y'all today! 'Tis the season of finger foods! 

What?! You didn't know finger food season follows cookie season?! Have you looked around bloggy-land lately?! Between New Years' Eve party food and Super Bowl food, I'm pretty sure there is a finger food season. I'm just sayin'.

The great thing about finger food season is, you can eat little bits of lots of different foods and call it a meal! I don't know about y'all, but I love finger food - wings, chips and dips, muddy buddies, veggie trays, smokies wrapped in bacon, popcorn ..... seriously, what's not to love?! These Barbecued Peanuts will make a great addition to your New Years' parties, your Super Bowl parties ... and they're great anytime snacks - you don't even have to have an excuse or a party!

On a side note - you'll have to check out my Facebook status regarding these Barbecued Peanuts - ahem, gotta love boys! ;)

The recipe couldn't be simpler ..... Let's see how we do it, shall we?!



Barbecued Peanuts
Printable recipe
Yield: about 3 cups

Shortening, for greasing baking sheet
⅓ cup barbecue sauce
2 tbsp. butter, melted
1 tsp. garlic powder
¼ - ½ tsp. cayenne pepper
1 jar (16 oz.) dry roasted peanuts

Preheat oven to 325°F. Grease a large baking sheet and set aside.

In a large bowl, combine the barbecue sauce, butter, garlic powder and cayenne pepper. Add the peanuts and stir well, coating the peanuts evenly with the mixture.

Transfer the peanuts to the baking sheet and arrange peanuts in a single layer. (A good jiggle usually does the trick!)

Bake for 25-30 minutes, stirring every 10 minutes.

After the bake time, spread the peanuts evenly on waxed paper to cool. Allow to cool completely before storing in an airtight container.

Healthy & Easy Green Smoothie

It's the last day of 2013 ... can you believe it?! This year has just flown by! I know many of us are looking forward to 2014 - and we have made goals or resolutions to be healthier in the New Year! This Healthy and Easy Green Smoothie will help you get off to a great start!

My kiddos aren't very fond of the idea of having a green smoothie - so I don't add a lot of spinach for them - just enough for some healthy benefits without them refusing to drink it! If your family is ok with the color and the idea of spinach being in their smoothie, feel free to add more spinach to your family's tastes!



Healthy and Easy Green Smoothie
Printable recipe
Yield: 1 serving

½ cup frozen fruit (any kind you like!)
1 medium banana
1 cup low-fat yogurt (any kind you like!)
Handful of baby spinach
1 tbsp. honey (optional)
Splash of juice or milk (optional - depending on how thick you like it)

Add all ingredients to blender. Cover and blend until smooth. Serve!

This year, I had my first picture accepted to Foodgawker ..... my Pumpkin Oatmeal Chocolate Chip Cookies were the first accepted to any of the coveted foodie sites. To some, it may not be a big deal - but it was one of the goals I hoped to accomplish this year and I DID IT! I also hoped to surpass one million page views this year ..... and I DID THAT TOO! Pocket change to some - but that was huge for me and my little ol' blog! I am encouraged by so many of you - and my bloggy friends are the best! I just can't thank y'all enough for everything!

Ham Salad - Put those leftovers to good use!

Christmas has passed ..... All eyes are on the New Year it seems! Maybe you're wondering what to do with all of that leftover Christmas ham? One of my favorite recipes with leftover ham is Ham Salad - it's so easy and I love that it can be used on crackers or in sandwiches! Put those leftovers to good use!

Some folks like to add boiled and chopped eggs to their ham salad - totally not my thing, personally ..... but if you like the idea, 2 or 3 boiled and chopped eggs can be added to the recipe below.



Ham Salad
Printable recipe
Yield: 10-12 servings

3 cups fully cooked ham, finely chopped (I use my food processor)
1 tbsp. sweet pickle relish
1 tbsp. finely chopped onion
1 tbsp. finely chopped celery
1 cup mayo (or more to taste)
1 tbsp. yellow mustard
Crackers or bread, for serving

Combine all ingredients (except crackers or bread) in a large bowl. Mix well. Refrigerate until serving time. To serve, spread mixture on crackers or use on bread to make into sandwiches!
