Christmas just wouldn't be Christmas without at least one batch of peanut brittle. It's one of those things I make every year. My oldest son would tell you this is one of his favorite Christmas treats!Y'all know by now that I like easy - and it doesn't get much easier than this microwave version! I love that I don't need a candy thermometer for this recipe - because really, who has one of those things anyways?!Microwave Peanut BrittlePrintable recipeYield: about 1 to 1½ pounds
1 cup sugar
½ cup light corn syrup
1 cup salted peanuts
1 tbsp. butter
1 tsp. vanilla
1 tsp. baking soda
Butter a baking sheet and set aside. Combine the sugar and corn syrup in a large microwave-safe bowl; microwave on HIGH for 4 minutes. Stir in the peanuts and butter; microwave for an additional 3 minutes or until the mixture turns a caramel color. Add the vanilla and baking soda - working quickly to mix and spread onto the prepared baking sheet. Let candy stand until cool and it hardens. Break into pieces.
