My family is in the process of making a few changes in our lifestyles and diets. We are making healthier choices, cutting out a lot of (but not all of) processed foods, and we're getting active. Although I mostly use Silk in my smoothies, I decided to put Silk to the test and see how it worked in my favorite Mexican Rice Pudding recipe. Arroz con Leche is one of my favorite comfort foods. It's so easy to make, you can eat it hot or cold - and I love that it can be a dessert or breakfast ... or is that just me?! :) I used the Silk Vanilla Soymilk for this recipe, but I think that the Silk Almondmilk and Silk Coconutmilk would be great, too!

Arroz con Leche (Mexican Rice Pudding)
Printable recipe
Yield: 4-6 servings
Ingredients:
- 1½ cups water
- ¾ cup long grain rice
- 2 cups Silk Vanilla Soymilk, divided
- ⅓ cup sugar
- pinch of salt
- ½ tsp. cinnamon
- 1 egg, beaten
- ⅔ cup raisins
- 1 tbsp. butter
- ½ tsp. vanilla extract
In a medium saucepan, bring water to a boil. Stir in rice; reduce heat to low, cover, and simmer for 18-20 minutes or until all of the water is absorbed and the rice is tender.
Add 1½ cups of Silk Vanilla Soymilk, sugar, salt and cinnamon. Cook over medium heat, stirring often, until thick and creamy - about 15-20 minutes.
Microwave the remaining ½ cup Silk Vanilla Soymilk on HIGH for 1-2 minutes. Slowly beat it into the beaten egg, tempering it. Add the egg mixture and raisins to the rice mixture; cook 2 minutes, stirring constantly. Remove from the heat and stir in the butter and vanilla extract.
Serve warm or refrigerate.
**Note you can use leftover rice for this recipe - just skip the step where you cook the rice! :)
