With all of these "Elvis" themed recipes on my blog, I'm starting to think I might need help! Maybe it's just the shock factor for me? People always seem to flock to bacon dishes and they tend to be surprised when you tell them there's bacon in any kind of dessert! At least in the dessert world, bananas and peanut butter sound like they belong with bacon, don't they? Making a dish or dessert with that combo seems natural and calling it "Elvis" comes with the territory - his sandwich preferences are quite well known after all.

Since bacon month is winding down, I have to tell y'all, I have had a ton of ideas to share over the past few weeks. My original recipe today was supposed to be a salad (I will probably be sharing that in the future some time!) How this ended up being cookies, I'll never know - other than it was a lightbulb moment! Or maybe my thought process is really that random?

Elvis Puddin' Cookies
Printable recipes
Yield: about 40 cookies

¾ cup butter (1½ sticks) butter, softened
½ cup creamy peanut butter
½ cup sugar
½ cup brown sugar
2 eggs
1 tsp. vanilla
2¼ cups all-purpose flour
1 tsp. baking soda
½ tsp. salt
1 box (3.4 oz.) instant banana cream pudding
10 slices bacon, cooked and crumbled
1 cup mini chocolate chips

In a medium bowl, cream the butter, peanut butter, sugar and brown sugar with an electric mixer until well combined. Add the eggs and vanilla; mix well.

In a separate medium bowl, combine the flour, baking soda, salt and dry pudding. Slowly add the dry ingredients to the creamed mixture, mixing well. Stir in the bacon and chocolate chips. Cover the bowl with saran wrap and refrigerate for at least 30 minutes.

Preheat oven to 350°F. Line baking sheets with parchment paper or Silpat. Scoop or roll the dough into 1-inch balls. Bake for 8-9 minutes. Allow cookies to cool for 2 minutes on the baking sheet before transferring to a cooling rack to cool completely. Store in a covered container.

My family has movie night on Friday nights. Does your family do "movie night?" We usually have pizza for dinner because the kiddos love it - and it's something they can help with! Actually, now that my kids are getting older, they can do the entire process - from making the dough to baking - all by themselves. I have to admit, I may be a food blogger, but it's nice having a night off from cooking once in awhile! :)

Although we typically enjoy copious amounts of popcorn for movie night ... because what's a movie without popcorn ... sometimes, we like to change things up a bit. If you've read my blog for any length of time, you know how I roll! My personal hashtag should be #neverthesametwice .... oops!

I decided to make a Cookie Mix and although I've had the idea for the longest time, I have had the hardest time finding the cookie dough bites that I wanted to use! Thankfully, I finally found them at Walgreens!! Woot woot for finding the unfindable!

Of course, you can totally customize this to your family's tastes and preferences. If you find other cookie-themed food, feel free to add them to the mix - they say, "the more, the merrier," right? I am so down with more cookies!

I found some cute little fry boxes that we used to hold our snacks - somehow, cute packaging makes things better, doesn't it?

Cookie Mix
Printable recipe
Yield: 10-12 servings

4 cups (from an 11.25 oz. box) Cookie Crisp cereal
2 cups (about 6 1-oz. packages - from a 12 pack box) mini Oreo's
1 bag (8 oz.) Hershey's Cookies 'n' Creme Drops candy
2 boxes (4 oz each) Cookie Dough Bites

Add all of the ingredients in a large bowl. Gently mix with a large spoon or clean hands.

Those of you who follow me on social media, may have seen me mention that my oldest son is graduating from high school this week. As a mom, I have had a whirlwind of emotions - from pride all the way to fear. To be honest, I am amazed at how fast almost 18 years have gone by. 

This past weekend, I think the reality of everything really started to sink in. It's one of those things, you know it's coming, but you never really prepare for it .... it just kinda sneaks up on you. You know what I mean? Needless to say, I have shed many tears and questioned myself as to whether or not I have done everything I could to prepare Elijah for the world he is about to face. I'm almost certain most parents have the same sorts of feelings when their babies get ready to step out on their own.

One of the ways I cope with stress and/or change, is by baking or creating yummy things to eat. It's my zone, my happy place. Although the idea of Oreo Truffles is not new, I couldn't resist taking one of Oreo's newest flavors and creating a fun summer truffle with it. I love that it's no bake (hello, no hot kitchen!!) ... and truthfully, these truffle are kinda cute with their pink centers and white candy coating. A sprinkle of some cookie crumbs on top makes it perfect!

Fruit Punch Oreo Truffles
Printable recipe
Yield: about 48

1 pkg. (12.2 oz.) Fruit Punch Oreos
1 pkg. (8 oz.) cream cheese, softened
1 pkg. (16 oz.) vanilla flavored CandiQuik

Line a baking sheet with waxed paper and set aside. 

Place the Fruit Punch Oreos in the bowl of a food processor and blend until the cookies resemble fine crumbs. Measure out ¼ cup cookie crumbs. Set them aside.

Combine the remaining cookie crumbs with the cream cheese until thoroughly combined. Using a rounded teaspoon, shape the mixture into 1-inch balls. Place on prepared baking sheets. Repeat until all of the cookie/cream cheese mixture has been used.

In a microwave, melt the CandiQuik according to package directions. Dip each ball into the melted candy coating, allowing excess to drip off. Replace the covered balls back onto the cookie sheet. Immediately sprinkle a bit of the reserved cookie crumbs over the top of the truffle before the candy coating hardens. Repeat with remaining balls, candy coating, and reserved cookie crumbs. Allow to stand until firm.

Store truffles in a tightly closed container in the refrigerator.

Single Serve Chocolate Chip Cookies

Hello,  Love Bakes Good Cakes World!  Jamie has been nice enough to allow me take over for the day, so please adjust your seat into the upright position, and let's get started.  My name is Kim; I am a Libra, an animal lover, and a self-proclaimed "weirdo" who loves to cook.


Today I'll be sharing my favorite Single Serving Chocolate Chip Cookie Recipe - because sometimes, I just want A cookie...as in singular, as in : one, uno cookie.  However, when I make a batch of cookies, and tell myself:  "I'll just have one, little, cookie" -  I just can't help it!  I somehow transform into a cerulean blue Muppet and am like: CCOOOOOOKKIIEESSSSS!!! Nom-Nom-Nom!!!!!
  

This is, by far, THE BEST single-serve cookie recipe I have come across.  It  will yield about 1/2 cup of cookie dough. That's two substantially sized cookies!  It can all be mixed in one small bowl - super fast, super easy.  I preheat my oven; cream the butter, sugar, egg yolk and vanilla; measure in the dry ingredients; and fold in the chocolate chips. Pretty much by the time my cookie dough is on the pan, my oven is beeping that it is preheated, and ready for coooooookies!  Eight minutes later I am pulling 2 flawless cookies out of the oven. One for me, and one for my inner Muppet.  



Since this is a small batch of cookie dough you'll have a smaller margin for error.  Ensure that all measurements are accurate.  I've also found that freezing the dough, just for a few minutes, works really well - it helps prevent the dough from spreading out too far when baked.  Flattened cookies are always a bummer- edible - but they mock you with their flatness.  The Muppet doesn't mind flat cookies, however.  
CCOOOOOOKKIIEESSSSS!!! Nom-Nom-Nom!!!!!  

Single Serving Chocolate Chip Cookies
makes 2 large cookies, adapted from:  No2 Pencil

2 TBS butter
2 TBS dark brown sugar
1 TBS granulated sugar
1/4 tsp vanilla extract
1 egg yolk
pinch of salt
1/4 tsp baking soda
1/2 cup unbleached flour
3 TBS chocolate chips

Preheat oven to 350, line a baking sheet with parchment paper.
In a small bowl cream butter and sugars together, add vanilla and egg yolk,  Stir in salt, baking soda, and flour - stir until flour is just incorporated - do not over mix.  Fold in chocolate chips.
Freeze dough for 2-3 minutes.  Form into 2 cookie balls and place on parchment lined pan, allow 3-4 inches between cookies, these will spread while baking.
Bake for 8-9 minutes.  Cool in pan for 2 minutes then transfer onto a wire rack to finish cooling

**Notes**
This recipe doubles well, if needed
I have used half of an egg white (1 TBS) with good results.
If using large chocolate chunks, reduce to 2 rounded tablespoons.

Hearts & Bows Cookies

These Hearts & Bows Cookies are so cute and easy! They're perfect for a loved one in your life!

I'm not a big celebrator of Valentine's Day. I usually get Brian a card and a small gift .... and we have a nice dinner alone. The dinner alone is a huge treat for us, because it rarely happens. Sometimes (read many times), we don't even have our Valentine's Dinner on Valentine's Day .... because life just works that way.

I usually get all of my kiddos a token or gift too .... a small box of chocolates, a personal pan pizza for lunch - or a batch of these "heart-shaped" cookies.
