Are y'all ready for some Fall baking?! I am!! I have been dreaming about pumpkin and apple treats for weeks now. As you may have already noticed from some of my recent posts, I have given in and started baking. Of course, it's still hotter than you know what here in Phoenix ... nevermind that though ... let's do some baking!

I wanted to share this Easy Apple Cake last year, but it's one of those recipes I never got around to making.  It only has THREE ingredients and it's perfect for Fall baking! I like to make it look a little fancier with a dollop of sweetened whipped cream and a sprinkle of cinnamon, but that it totally optional and up to you! I've linked my Homemade Sweetened Whipped Cream in the recipe below in case you would like a homemade version. A scoop of cinnamon or vanilla ice cream would be great also! Of course, it's great by itself also! :)

This Pumpkin Dump Cake is so easy - just like the name implies! Although this is perfect for Fall, you don't have to wait that long! ;) I sure didn't! Ha!

Summer is in full swing. It's been hot as Hades in Phoenix. Triple digit temperatures every. single. day, ya'll ... and no relief in site! I'm just glad there's very little humidity here .... seriously, I would never leave my house - ever!

Since my family is in the process of adding a pool to our backyard, I wanted to share a fun and refreshing adult-type beverage! I'm stopping by buddy, Evelyn's place, with a Circus Margarita. It's got Cotton Candy vodka in it! So good! I've told Evelyn that she'll have to come to Phoenix for a visit once the pool is done and we can sit by the pool with margaritas in hand, talking and laughing! I thought it was only appropriate to bring this drink over for a guest post! Taco Stuffed Grilled Cheese

Helll-llloooo my Love Bakes Good Cakes peeps!  Is it okay if I call you all that?  Cool.  It's me, Kim from Soliloquy Of Food & Such....again.  In fact, I'll be here on the first Friday of every month - so mark your calendars!  I'm going to share these Taco Stuffed Grilled Cheese today, just in time for Cinco De Mayo.     

My hubs and I are currently RV-ing from New England to Alaska, where we will then be working this summer.  This is something I put together one night after a long, long day of driving.  I had planned on making tacos; I had all the fixings except the shells or wraps!!  Who does that?

I couldn't let it go.....I had obsessed about melty cheese and guacamole ALL DAY long.  (I know, I have issues.)  I tore thorough the cupboards in a frenzy......want.....tacos......must.....have.....ahhh!! Then I spied a loaf of bread and thought:  what the heck?

Layer your favourite taco ingredients with just a little extra cheese, shmush them between two slices of buttered bread and grill.  These are hardier than regular tacos; I could only eat 1, where I can easily polish off 2-3 tacos.  These have all the comforting goodness of a golden, melty grilled cheese along with the zingy taco components.



Layers of cheddar cheese, taco meat, guacamole, sliced tomatoes, and Monterrey Jack cheese - Taco Stuffed Grilled Cheese - www.soliloquyoffood.com

Taco Stuffed Grilled Cheese
*makes 6 sandwiches

You will need:
1 loaf of sliced sandwich bread
1 pound seasoned taco meat (see below)
8 oz sharp cheddar cheese, shredded
8 oz Monterrey Jack cheese, shredded
3 small tomatoes, thin sliced
prepared guacamole (see below)
4 TBS soft butter
Sour cream for serving, a few dollops

Heat a large skillet over low heat.  Butter the slices of bread and start layering the sandwiches - buttered sides facing out.  Start with about 1 once of cheddar; top with about 1/4 cup of taco meat, then a 1/4 cup of guacamole; layer a few tomato slices; top with 1 ounce of Monterrey Jack; finish with your top piece of bread.  Grill on low for 4-5 minutes or until golden brown, flip and finish the other side for an additional 4-5 minutes.

Serve with sour cream and any extra guacamole for dipping.

For The Taco Meat:
1 pound lean ground beef
1 package of taco seasoning, ORthe following spices:
4 tsp chili powder
2 tsp ground cumin
½ tsp garlic powder
½ tsp smoked paprika, or red paprika
½ tsp dried oregano
½ tsp seasoned salt
¼ tsp black pepper

Heat a large skillet over medium/high heat.  Add the ground meat, beak up into small pieces as the meat cooks with the back of your spoon.  When the meat is fully browned and no pink remains, drain off any fat and add in spices.  Mix thoroughly reduce heat to low, cook for an additional 4-5 minutes. 

For The Guacamole:
3 semi-soft avocados
¼ cup fine chopped red onion
¼ cup fine chopped cilantro
1 ½ limes, juiced
salt to taste

Slice open, seed and scoop out the avocado halves into a small bowl. Add lime juice and mash with a fork.  Stir in chopped onion, cilantro and a good pinch of salt.  Use immediately.  

*NOTES:  
The key to melting the cheese without burning the bread is the low heat setting; grill these low and slow.  
Depending on the amount of filling, you may be able to get 8 sandwiches total.  I made 6 hearty sandwiches with a little meat and guacamole left over.  
Begin and end  layers with cheese, they are the glue that holds the whole thing together.

Single Serve Chocolate Chip Cookies

Hello,  Love Bakes Good Cakes World!  Jamie has been nice enough to allow me take over for the day, so please adjust your seat into the upright position, and let's get started.  My name is Kim; I am a Libra, an animal lover, and a self-proclaimed "weirdo" who loves to cook.


Today I'll be sharing my favorite Single Serving Chocolate Chip Cookie Recipe - because sometimes, I just want A cookie...as in singular, as in : one, uno cookie.  However, when I make a batch of cookies, and tell myself:  "I'll just have one, little, cookie" -  I just can't help it!  I somehow transform into a cerulean blue Muppet and am like: CCOOOOOOKKIIEESSSSS!!! Nom-Nom-Nom!!!!!
  

This is, by far, THE BEST single-serve cookie recipe I have come across.  It  will yield about 1/2 cup of cookie dough. That's two substantially sized cookies!  It can all be mixed in one small bowl - super fast, super easy.  I preheat my oven; cream the butter, sugar, egg yolk and vanilla; measure in the dry ingredients; and fold in the chocolate chips. Pretty much by the time my cookie dough is on the pan, my oven is beeping that it is preheated, and ready for coooooookies!  Eight minutes later I am pulling 2 flawless cookies out of the oven. One for me, and one for my inner Muppet.  



Since this is a small batch of cookie dough you'll have a smaller margin for error.  Ensure that all measurements are accurate.  I've also found that freezing the dough, just for a few minutes, works really well - it helps prevent the dough from spreading out too far when baked.  Flattened cookies are always a bummer- edible - but they mock you with their flatness.  The Muppet doesn't mind flat cookies, however.  
CCOOOOOOKKIIEESSSSS!!! Nom-Nom-Nom!!!!!  

Single Serving Chocolate Chip Cookies
makes 2 large cookies, adapted from:  No2 Pencil

2 TBS butter
2 TBS dark brown sugar
1 TBS granulated sugar
1/4 tsp vanilla extract
1 egg yolk
pinch of salt
1/4 tsp baking soda
1/2 cup unbleached flour
3 TBS chocolate chips

Preheat oven to 350, line a baking sheet with parchment paper.
In a small bowl cream butter and sugars together, add vanilla and egg yolk,  Stir in salt, baking soda, and flour - stir until flour is just incorporated - do not over mix.  Fold in chocolate chips.
Freeze dough for 2-3 minutes.  Form into 2 cookie balls and place on parchment lined pan, allow 3-4 inches between cookies, these will spread while baking.
Bake for 8-9 minutes.  Cool in pan for 2 minutes then transfer onto a wire rack to finish cooling

**Notes**
This recipe doubles well, if needed
I have used half of an egg white (1 TBS) with good results.
If using large chocolate chunks, reduce to 2 rounded tablespoons.

Whether we like Facebook's algorithm or not, we have to acknowledge the huge potential this social media platform still carries in driving traffic to our sites. Often times, it's my number one or two traffic source! I know it is easy to become frustrated and want to throw in the towel, but remember this: What other social media platform has the potential reach of Facebook? None. From old to young people, from men to women, from rich to poor, across all demographics - who doesn't have a Facebook profile?! No other social media network can say that.

I know many bloggers talk about moving over to Google+, but the truth is, our readers just aren't there. One question I get asked a lot, is how I have managed to grow my Facebook page to what it is today. The truth is, there is no magic formula. It takes time and work. I am not an expert - but I do think I have learned a few things in almost two years of blogging! I also have some Facebook tips that may help you out!
