Ham and Pineapple Fried Rice

Can y'all believe that we're already almost a week into August? School starts this week here in Arizona, too. Is it just me or did this summer fly by? Although we homeschool, we keep a very similar schedule as the public schools. 

With school literally days away, I need quick and easy meal ideas - and maybe you do too? One of our favorite meals is Fried Rice ... and we probably have 15 different variations! (You can see some of them below!) This Ham and Pineapple Fried Rice fits the bill in ease and taste - and is a family favorite!
